Maple sap season has started this past week with temperatures above freezing during the day and below freezing at night. The weather has been cloudy, so the sap is running slower than average. With just a few gallons of sap collected, we slowly simmer it on the back of the stove all day. This method of evaporation produces a light-colored maple syrup with a sweet butterscotch flavor. It is very delicious!
