Technically you don't "join" relays, in most clients. You read from relays, and you write to relays. I know that some apps use the "join" terminology, but it's not accurate, with the exception of relay-based communities, such as in Flotilla.social.
What relays you use is going to depend on your goals. Whichever client you are using has probably already set up some default relays for you to use. Until you understand why you might want to use other relays that might optimize for different goals, you are probably safe to stick with those defaults.
