With those needs, it won't be the perfect fit, but maybe the next step.
The hub is the LN node, so they don't need to run a node and the hub. They'll need to manage the LN node though (create channels, manage inbound liquidity...). From the hub you can easily open channels to LSPs to have inbound liquidity. Then maybe use boltz.exchange to swap-out of LN into on-chain cold wallet when you close the day/week/month.
With the PoS, you essentially give the staff the bility to request payments but nothing else, so they won't be able to take any money. You can give an isolated wallet (with limited funds that you can top-up at will) to managers for paying for supplies and similar stuff (or maybe to refund fuckups and so on).
The only part that won't work is the fiat side, you'll need traditional/alternative rails for that. As I said, maybe not perfect fit for what you are looking for, but definitely worth considering for more advanced merchants that want to reduce custodial risks.
