Big Food is big on carbs because they are massively addictive and cost very little to produce. The more products they can enrich with some kind of carb the better. Profit margins are much higher on cookies than they are on a steak.

I think at this point in time you are almost better off doing nearly the complete opposite of what health experts try to tell you.

Some companies try to cut sugars in their products but just replace them with other crap like xylitol, sorbitol, sucralose and other sugar alcohols or chemical compounds. Instead of making it better they now made it worse.

Sugar is a drug, you are an addict and the only to improve is to take massive cuts in carb intake and avoid replacements.

I've been doing keto for more than 12 years now. I still like bread, rice, potatoes, pasta, cookies and chocolate. I allow myself to eat them occasionally but they will never be part of my standard diet ever again.

What this has done for me is making me feel satiated, not worrying about eating too much, steady energy levels, much higher quality sleep. I was never very heavy but i did go from nearly 90kg to being somewhere between 72 and 78kg without ever feeling hungry and the need to fight it with discipline.

I never convinced anybody else about this lifestyle though. People get flooded by government institutes and health experts still promoting carbs and avoiding (animal) fats. The whole vegetarian narrative is definitely not going to make people healthier or less obese. I am very worried about meat replacements...
