First time making Tom Yum in large portions, and it was a resounding success. Recipe serves one, so I used 12x the ingredients and one minor substitution for the chili jam the recipe names as optional (used same amount of Kikkoman Thai chili sauce). Math is ~2oz chicken = 1/3 cup to replace the shrimp, though I just used 2lbs for the 12x as a rough estimate. Only used 6 Thai chilis for the 12x batch, 3+ per serving is REALLY spicy for most. 2 is edge of my comfort.
