Well, they probably prefer butter because even though it's only ~ 1g/100g it contains at least some small amount of protein, while most margarines contain roughly half of that or less.
I'd speculate that ants would flock to the margarine instead, if you changed its ingredients so it contains more than 1g of protein per 100g. I don't think ants care much about fatty acids.
