Since all of my Blender project files are synced with Dropbox, I set up a Shortcut on my phone to automatically create a new project folder for me that is numbered correctly and with all the sub-folders I want every time I start a new scene.
It makes me unreasonably happy every time I get to press that button and everything I need just magically appears in my projects folder.
