Whenever we go shopping and notice something pricey like top-tier fish (Pomfret, Spanish Mackerel (surmai/vanjaram), Indian Threadfin "Salmon" (rawas) here in India), we might feel a bit apprehensive about buying them.
However, when we go to a restaurant we wouldn't hesitate to pick exorbitantly priced items made from the same ingredients.
It's better to buy good stuff, and learn to cook them at home. This is the sweet spot, where you can enjoy high-end things at comparatively reasonable prices.
The best part is, many of these high-end ingredients don't require you to do much with them in terms of cooking techniques, because they are that flavourful. In fact, the less you do, the better.
