The most famous example is Caligula forming up his legions in Gaul and making war on the sea. It's usually cited as an example of his madness but there were celtic festivals where armies would come together and attack an effigy, usually at the top of a mountain or cliff and fight a mock battle to force it into the sea or a river. So he was probably doing that.
Whenever the romans were invading somewhere another priority of theirs would be to capture local priests and cultic artifacts to learn about their religon. Then they'd pray to the local gods and try to present themselves as more worthy than the local rulers. Ultimately the cultic artifacts would be brought to rome to be installed in the temple of Jupiter as a sign of submission.
