My garden is producing lots of tomatillos and Asian-style eggplants. Are there any particular reasons not to sub tomatillos for tomatoes in Indian or Thai or Burmese recipes? Anything else you’d adapt to compensate?

Or any thoughts on Mediterranean eggplant recipes that’d be good with tomatillos & skinny eggplants?

(Note: I don’t like tomatoes on their own and prefer not to have any in my kitchen, but I do really love certain versions of baingan bartha, so that might be where I start.)
