I think it would be more ergonomic if the end user had an unsealed trait they could implement on structures that aren't compatible with the `Queryable` derive macro. I realize `QueryResult` gets down in the weeds of Gel specifics, but maybe there is a middle ground - like allowing the user to derive `Queryable` on any struct whose fields `impl From<Value>` or something.
