They're pretty comparable, honestly. I have used both and have a slight preference to Start9 (npub126n…e9ll). Pros to umbrel (npub1agh…mhct) is their app store has a lot more apps available and it is dead simple to set up a reverse proxy to your services since they use a standard port system and now have Nginx Proxy Manager available to install. Cons are, they aren't fully open-source and it is more difficult to run anything that is not available in their approved marketplace.
Pros of Start9 are, most everything you actually need for running a high-functioning Bitcoin and Lightning node are all in the marketplace, and it is really easy to side-load applications that aren't in the marketplace, so long as they have been packaged for Start9. StartOS is fully open-source (MIT). If you buy one of their devices, you get lifetime support and they are quite helpful folks, from my personal experience. Cons are that until we get their next update, (no ETA for a year+) we won't have the ability to easily set up a reverse proxy to services running on the device, which means remote access is pretty well only via Tor.
I am personally using my old Umbrel as a home server, since I can so easily remotely access the services running on it, and using my Start9 as my Bitcoin and Lightning node with remote access to my wallet via NWC thanks to Alby (npub1get…0nfm) Hub.
