Tonight I made big fluffy baozi fully stuffed with ginger, garlic, shredded carrot, mushroom, and scallion filling, flavored with Pixian doubanjiang. I've struggled in the past with uneven buns that don't stay fluffy, or don't hold enough filling, but giving them a good two hours to rise seems to have done the trick.
