Dinner tonight was phở. The broth was made Wednesday / Thursday. The brisket was in the sous vide from Thursday lunchtime until bedtime on Friday. Today it was finally assembled with some carrots, chard, and sunflower sprouts. It was pretty good, but the sprouts were… not my ideal. I may need to get a jar of bean sprouts going, since the grocery store doesn’t regularly stock them.
