I am back onto lots of khichdi/kitchari for breakfast, trying to get the last of the blood test thingies down. Luckily I love khichdi and mix it up by using other (healthy) grains as well. Buckwheat. Millet. GF Oats. ...
The Instant Pot cooks it so well (pot-in-pot method) but for variety, it can be cooked stove-top or in the oven. I even use the rice cooker sometimes. Each gives a different experience - texture and flavours can differ. Veggies can be added. Ghee is so good added after it is cooked. Use all the good spices.
