Intellectual humility isn't pretending lower-IQ people are just as smart as you. It's understanding that even if you're smarter, they might currently know something you don't, might currently be right in a spot where you're wrong.
Similarly, "if you can't explain it simply to an outsider, you don't really understand it" is just a grossly oversimplified way of expressing "if you can't mentally model what a person needs to understand in order for your claim to make sense vs. what an outsider doesn't yet understand and conceptually bridge the gap between the two, or even begin to lay the foundations so one can see how a bridge could potentially be built there, chances are you haven't even built that bridge for yourself and are just parroting what others have seen on the other side"
