I love green beans. My neighbor growing up called them green candy and we'd eat them raw straight from the garden.
That's a pretty hard bar to clear for making a better green bean. I feel like maybe runner beans might clear that bar.
I really struggled to get past the grippy/fuzzy texture, but once it's cooked even the tiniest bit, it's so freaking sweet and dense and crunchy even when they're freaking magungous.
I'm annoyed with myself for my scepticism for them early on, when I had access to a boatload from a lady who went on vacation during the very end of green bean season/trailing end of runner beans season, and had more than she knew what to do with. Now I aspire to be in that condition. I feel like they would be astounding dilly pickles.
Some day, I will have more green beans than any two people can eat in a year, and I'll be really stoked.
In the meantime, what the heck do I do with two massive Armenian cucumbers and a dozen tiny delicatas?
