Shipping in fandoms is basically the act of seeing two characters together in a relationship, usually as a fan-fiction pairing. When the writer(s) of said literature decide to actually put two characters together, then the "ship" becomes canon.
Cannon and canon are often confused in spelling. A cannon sinks a ship with cannonballs, while a writer making something canon can destroy people's imagined relationships between characters.
Canon also makes cameras, to further confuse. :D
