I think they'd be in a bind if bitcoin dipped against the dollar, if their business obligations are in dollars, unless they can float the dollar expenses with credit, hoping that bitcoin recovers by the time that credit is due ( and it could be worse by then). So if your business obligations are denominated in dollars, you'd better accept in or immediately convert to dollars when the bitcoin receivable is received. Or prorate the conversion it according to the expense obligations.
