We've had a cloud inversion here in my valley. It is so dark and damp, not cold but not cozy. Just awful. The kind of weather that is more depressing than and Irish whisky hang over. So, I decided to pull out some Yule food, like cheese, deli meat and pickles to perk us up.
I absolutely hate the commercialism of food and the ridiculous prices that some food costs based on trends or other unnecessary things. For instance, crackers. The price of crackers, especially what is deemed as gourmet and natural or not loaded with preservatives and crap. So, while it does take a bit of time, making crackers is very worthwhile. I made one batch with 4 kinds of toppings here, sesame seed, salt and pepper, just salt and hemp seeds. The only tricky part is baking them for exactly the right amount of time.. too little and they aren't crisp enough to scoop anything, too long and they get too dark. When they are in the oven, don't wander off to do something. Watch them like a hawk.

3 cups of flour- plus a tiny bit for rolling
1 or 2 tsp of sugar
2 tsp salt
1/4 oil (I used olive)
1 cup of water.

Mix the dough and briefly knead just to bring it into a homogeneous ball. Cut ball into 4 equal pieces. Each piece rolls out perfectly on a jelly roll pan. I flipped the pan upside down so the edges aren't in the way. I also used a silicone mat instead of grease or baking paper but paper would work well too.

After rolling out the dough to the dimension of the pan, I cut into cracker sized squares. I quickly ran my hand into the water tap, then patted the water onto the top of the cut dough. This helps the toppings stick. Sprinkle what you want on the top or leave plain. Bake from 10 to 15 min. at 450 F. My oven is a little weird and the first ones took like 15 min. but the last batch took 11 min. They get even crispier as they cool. Keep them airtight. You could briefly re-crisp in the oven on a different day.
