What kind of travel experiences do you enjoy most—exploring nature, visiting museums, engaging in outdoor activities, or something else? There are plenty of beautiful nature's gems I can recommend to visit, but for that I would totally rent a car. If you're into museums, castles etc. I would recommend Sigulda (there is a castle there + beautiful nature with hills, caves and forest, also great place for having a picnic there or renting a cabin to stay the night(though its not that far from Riga, so staying there is not a must). Cesis Castle - also a good one and I've liked the history show they make over there. Rundale Palace, one of my fav. From natural places: ethnographic museum in Riga (also good for picnic), cape kolka (where waves from Baltic sea and riga Bay clash) - but there it's worth driving only if you are planning to stay the night somewhere around or going to Ventspils for a few days. Kuldiga (also recommend if you decide to take a few day trip to kolka, ventspils etc.) Beautiful city, has the longest Venta waterfall in Europe, again nature and few museums. If you're into active travelling, around Sigulda, that I've mentioned earlier, there are some fun adventure parks like Mezakakis (this one isn't the only one in that area, so if you are into this type of activities- read about this one and other parks around to pick the one, that you'll enjoy the most.
For national cuisine I'd recommend to eat in Lido restaurant at least once (it's a buffet type of restaurant), good local bread - Laci, Latvian chocolates- Laima (not my favourite chocolates ever, but not bad)... well this is on top of my head, I can recommend you a lot in Latvia and some things to see in Estonia as well, but I need to know a bit more about your preferences ;) anyway, let me know if I can help more or give some information or honest opinion on the places that you have read about somewhere else :)
