Well the problem with that is that as soon as any of them go out, it's a race to cash out before they run out. Alternatively they could instantly rebalance and devalue your ecash but I don't know how that's better. It's still a net negative because you're taking risk with no upside so no one will keep money in it longer than they need to, which then loses most of the privacy benefits.
