Unfortunately on the N64 the interpolated vertex colors are not perspective correct (!) so it's not a great fit. Even smooth areas may need to be subdivided to make the sky not oscillate when rotating the camera. Note that I didn't try those in realtime so maybe they'd still work just fine!
