Niko Kultalahti (npub1eev…2fmz) Hey, I saw your blog post asking about peoples thoughts on the tech you thought about switching to. Can't speak on Synology or Framework, but do have some experience with Graphene and Nextcloud.
Though I've never used a fitness tracker (and it would probably be worth it to check with the #GrapheneOS community beforehand about yours before making a purchase) daily driving Graphene is pretty easy. With sandboxed Google Play services enabled in your main profile or a second one it's pretty much 100% compatible with everything any Android phone is. If you intend to use G Services it's a pretty good bargain, all of the benefits of Graphene with no trade offs.
Without Google play services (the way I'm using it) it's compatible with almost everything, but if you're a part of the Google ecosystem it can sometimes prevent you from using their apps, and it can also sometimes cause issues like apps being unable to send push notifications. For example, I have family members using Google Chat (the app won't work for me), but I get around that by just using the Google Chat as a web app on my phone. Or, for example, the Amethyst app won't allow push notifications because it rely's on G Services and doesn't allow you to use your own server for them afaik.
Nextcloud, for my preferences, is alright for how I use it. It's great for RSS feeds or transferring files and such, but I wouldn't want to use it as a backup or for anything sensitive (though if it's on your own hardware instead of a VPS you're probably a bit safer for sensitive stuff). The reason I use cloud backups is because in the event my stuff fails having my files stored on another server (with encryption) means they probably won't disappear if my stuff does - but if my cloud backups are on my own server then that's less redundancy. It's also unencrypted, so theoretically my VPS provider can see/access any content on it.
Hope this helps.
