I just ended up reading the entirety of the official Kubernetes docs' "Concepts" part (https://kubernetes.io/docs/concepts/) and then set up a kubeadm cluster following the Getting Started section in those same docs.

I think a more "batteries included" k8s distro like k3s might be a good idea, because you need to make fewer up-front decisions like "which CNI plugin" or "which Ingress".
