I genuinely hate how so much of modern regulation has lead to these middlemen who handle things for you like shopify and other payment processors. Stripe is just one of many of those sort of companies and I don't really trust them. I mean they're inexpensive but the problem is that you're opening up "we're sending your data to third parties" and making your users agree to a third party's terms of service in order to use your platform. I am unsure of UK laws regarding how hard it would be to just process IDs yourself. I don't know what the criteria is for storing that information and keeping it private.
