Last thing to sort here is Tailscale for remote wallet connectivity.
If I turn off Mullvad, it works fine.

I tore the arse out of chatGPT for mempool issues lmao…
Had to put a rule in UFW to allow connectivity in and out of docker ( where mempool is ran )

So in summary, I now have a Ketan nodebox, bitcoin core, electrum server, mempool, Mullvad VPN and Tor all working sweet as a nut with Sparrow wallet.

Next will be Tails for remote access, but that is another day. I installed it but again, issues with connectivity, and I cannot find the will to resolve for the (zero) amount of times I have needed it to date.

I’m a total noob, but 3 days in of problems and finally getting there may be able to cut down frustration for you.
