I'm in need of a recommendation for a notebook app. Some parameters:

* I am all-in on Apple's ecosystem; windows/linux/android-only solutions need not apply.
* I am happy to buy software but would prefer not to rent it.
* Multi-device sync is essential (desktop/mobile) but so is the ability to backup local files.
* Fancy markup isn't necessary but linking notes to each other would be very nice.
* Offline access is a must; no web-only solutions.

So what do y'all like?
