Because Instagram does not allow URLs in actual posts, (though they do allow some url embeds in stories), forcing janky, hacked in linking via your bio page (which can no longer be edited via a web browser, only the mobile app), generating traffic to your website is extremely difficult with the service.
Basically, Instagram these days is just about "fame" and name recognition. "Oh, Lance posted another reel! I should check his YT channel!" kind of thing.
