Oh yeah, way too much salt in those.

For tomatoes, I'll admit that I'll always go with the canned stuff with herbs, but the no-salt variety does work pretty well if you're looking for low sodium. Or you can just find some beefsteaks.

FWIW, this was:
1 can diced tomatoes,
1 can tomato soup,
1 can tomato paste (I go overboard on these, you might want to just stick with 2 cans tomatoes),
2 cans mushrooms,
2 medium-small green bell peppers,
3 smallish cooking onions,
1lb. lean beef...

I'll usually add beans, not this time though.

And for spices, I threw in two heaping spoonfuls of garlic, cumin, paprika, a sprinkle of turmeric, celery salt on the veggies as I sweated/sauteed them, herbs - basil, oregano, rosemary, bay leaf, thyme.

I put the cumin on the beef first with one spoonful of garlic, browned that thoroughly, drained the meat and used the juice to saute the onions, peppers and mushrooms, then just threw everything together on low for 8h.
