Yes good call on the shelling first. I’ll have to try that. I’ve tried this without shelling and the flavour is awesome but the shells were sometimes difficult to get off cleanly. The end product doesn’t look super appetizing but smoked eggs are awesome. It’d be cool to smoke shelled ones and use them in egg salad.
