I've also noticed this phenomenon several times. We discussed it at work and came to the conclusion that there are several contributing to the difference, it includes but not limited to:
1. Black-white vs. colour filming (obviously)
2. Story telling style - much more dynamic since probably mid 80' - Aliens, Terminator, DieHard, etc.
3. Older movies are more theatrical, modern more natural
4. Clothes and haircut style
However movie evolution haven't stopped after 90'. For example huge CGI progress was made in 00'. A clearly remember me thinking after watching Transformers2 - "wow, now I can't see the difference between real and animated characters". Also sex and brutally on the screen have been normalized pretty much.
