is the easiest thing to make. All you need is a blender. The only "special" ingredient required is amchur ( sour mango powder).
1 part mint, 1 part onion, 2 parts coriander, green chili, amchur,salt and sugar to taste. Blend it with a touch of water. That's it.
( The packet stuff is a bit onion-heavy and obviously has preservatives).
I've never had aubergine chutney though! But then, I don't like aubergines very much.
