I'd really like to reduce my processed/ultra-processed daily footprint even further while being on an extremely tight budget and making healthy choices. I'm having a bit of a mind-block on what to use for a filling mid-day meal within a sandwich. So far, I've been doing variations of Tofurkey slices.
Of course, there are staples like tomatoes, lettuce, spinach, and cucumbers to put between bread, but they don't seem substantial enough to last me over 6 hours before the next/final meal of the day.
Any advice is greatly appreciated! That extends to cookbooks, books on vegan living, or relevant websites. Thanks!
