Like what if there was some incubation or latent phase where the cannibalism was there but not expressed until something triggered it. Guy goes on a fast, thinks nothing of it, then a while later one of his good friends narcs him out to the cops. There's a big stink about it, the cops work him over and things get way out of hand. Everyone thinks he's dead, there's a long holiday weekend, and that's the end of it. Except it's not.
