I often need really easy things to cook. I know some other people around here are the same, so I wanted to share a recipe.
I have a book called 500 Indian Recipes (by Shehzad Husain, Ravi Fernandez, Mridula Baljekar and Manisha Kanani), which is great, but it's not the most organised cookbook. Things crop up in illogical places. So, despite having owned this book two years, I've only just happened upon this recipe.
And I wanted to share it because it is so, so easy. And also quick. Throw tomatoes in pan, stir, throw spices in pan, stir, throw chicken in pan, stir.
I thought maybe sharing would help?
(I see no reason why you couldn't replace the chicken with your favourite plant-based protein if so desired.)
