I have decided to use Hallertauer Tradition for this beer exclusively. Its delicate and more traditional floral aroma and flavor probably work better than any of the more IPA-centric varieties that I have in stock.

I plan to use a sizeable (for a Dubbel) quantity for bitterness and flavor charges (40g each). I have sampled a couple of Belgian Beers recently and some of the best had quite some hop character that contributed positively to the overall flavor. I want that for my Dubbel.
