I don't like everything being shoved into a hamburger menu either. I like having simpler apps where the core application functions are in the headerbar, a la GNOME's design philosophy. That said, if your application is more complicated and a headbar isn't sufficient, I... actually really like Ribbon UIs. I like that they're less ephemeral than the mouse hovering you use to open things in a menu bar, and I like how they let you resize different UI elements based on how much the user needs to use them. I never really understood all the Ribbon UI hate outside of Microsoft copyrighting them and putting them in too many places.
Also, yeah, Firefox's default interface is kinda awful. I don't like the whole tabs on top thing that a lot of modern browsers do. I'd rather have the tabs under the headerbar so then the entire headerbar (including the buttons) are a draggable surface. Again, a la GNOME.
