And the amazake is ready! Need to chill it down now and make some (ginger) syrup.
With the rice cooker turned out so much easier - didn't have to mess with making rice, thinning out and then sous vide in mason jars as I did before.
Made rice (1 cup) using the porridge function and then added more water to get it to 60 ⁰C and added a cup of rice-koji, mixed and left it on the keep warm setting, open and covered with a towel.
Final temp after 11h was 55.
Needs a bit of sweet but good flavor!
