Aside from the older ones which I love a ton of, newer ones I play a lot of include Wizodd - I play that one a lot. It's highly beatable but it doesn't happen every time. The same guy made Toroom and Doomed to Hell too, which are also good. Haven't beaten those- they're tougher! I also play a lot of Quest of Dungeons and Demon's Tier+ is incredible too. Bit Dungeon Plus I've done a good bit of. I really like the replayable ones or the ones that have a ton of play value, where you don't just hit a wall and die constantly/instantly. I'd love more games like the ones I just listed. Oh also, Colt Canyon, Toadomination, Brotato and Heroes of Loot 2! How about you? Been meaning to try Nuclear Throne, waiting for Voidigo to come to Switch, etc.
