They are the standard that people use for camping and that sort of thing. They are good food grade plastic and they have a built in tap. So they checked off my boxes of ease of use, size, and safety.

You can’t stack them, so that isn’t ideal if you have space limitations. And 7 gallons of water is 50+ lbs so that sounds like it isn’t something you can do.
