I think I should stop just keeping my beers bottle conditioning at basement temperatures for months.
Had a taste of one of my Belgian Blond ales that had been in the basement for four months and a taste of one that had been in the fridge for two of those four months. The former was showing signs of oxidation, the latter was super fruity and fresh.
I guess Craft Brewers make such a hoopla about proper storage of their beer for a reason...
