Yes hello peach riz here I’m glad you asked. Firstly, nice meats. Snake River is hard two go wrong with. Here’s my rib technique. Generally.
Rub a little mustard on for rub binder, add your rub generously, sprinkle a little turbinado sugar on it. Let sit overnight in fridge uncovered.
I like to smoke mine for 2 hours at 250. Then I back it off to 235 for the remainder of smoke. Probably another 2 hours or so. At that point I usually double foil and drizzle a little agave or honey on them before I wrap in the foil.
At this point shit gets more to personal preference. Ribs are more feel than temp. Wrap your foiled ribs in a towel and throw in a cooler and they’ll stay perfect for hours until you’re ready to finish them off with some sauce on the grill and eat.
