One of the things I find annoying about recipes is that they often are built around the idiotic assumption that you only have 1 method of heating food available to you.
Instant Pot recipes only ever tell you to heat things in an instant pot.
Microwave recipes only ever tell you to heat things in a microwave.
Traditional recipes MAYBE include both a range top and an oven, but they would NEVER tell you to use a microwave or an instant pot or any other piece of kitchen gear.
Well, today I broke the rules and made some fantastic #potatoes using a #microwave and an #oven. 😱
Recipe:
1. microwave a bunch of tiny potatoes (skin on) until they're soft/cooked through. If you can stick a fork into them easily, they're good.
2. oil up a baking sheet with some olive oil. put your tiny cooked potatoes on the sheet.
3. smash them flat to about 1/4” thick. (I used the bottom of a glass dish to do it)
4. put a bit more olive oil on top of them. salt them.
5. put the sheet in your oven on the top rack, turn on the broil setting (the top heating elements) and crisp those guys up! (took about 5 minutes in my oven)
6. (optional) add some other seasoning like rosemary or pepper or whatever)
Crispy, crunchy, easy.
