Managed to run steam on my mac. Though, I'm not on a silicon mac but an Intel one.

I just went with wine-stable, not the crossover version:

brew install --cask wine-stable
brew install winetricks
brew install zenity # for some gui for winetricks

./winetricks vcrun6 corefonts

and
wget https://cdn.fastly.steamstatic.com/client/installer/SteamSetup.exe
