I had to use up a few eggs before their sell-by date so I made Créme Anglaise, finally following a recipe and using a double-boiler (in my case a smaller saucepan over a larger saucepan of boiling water) and ice bath. And whaddya know, it came out great. Except I used 25% less sugar than called for and it's still way too sweet for me; I will have to give it away because I can't stand that much refined sugar these days. Next time I will make it with one-third or one-fourth the sugar. I use lactose-free milk which is sweeter anyway.
