I made the mistake of buying a large eye of round thinking it was the same as eye of chuck which is a better cut of meat.
I was able to salvage into a delicious roast last night when cooked at medium and when sliced thin it was decently tender.
It was so good I'm already hungry for leftovers for lunch.
