My daughter called me yesterday while commuting. A friend had just gotten fired from a job for calling out something she thought was illegal, and she wanted help downloading her work inbox before she got locked out, so she could have evidence of it.
So either I just helped someone whistleblow, or I aided and abetted a crime. Or both. :)
P.S. Should you ever need to transfer between two mail systems, for whatever reason, the simplest solution is to use an email program you trust to do IMAP right (that rules out Outlook in my mind), connect it to your old account and your new account, and drag and drop between the two. Apple Mail works fine, although it doesn't let you drag folders, so you have to manually select-all in each one if you're trying to keep it organized. Also, I think people tend to forget that you can connect any IMAP mail program to Gmail so long as it supports Google's authentication mechanism.
P.P.S. If you work for a company that actually locks down their work laptops and takes security seriously this might be a lot riskier, especially if they do inspection on traffic leaving your laptop. Of course, that kind of company would have shut down account access before firing someone. That said, if you're on a split-VPN and have an Exchange-based mail system that supports EWS, the DAVMail app creates a local IMAP server from the Exchange system and so can act as a proxy for an email app on another machine.

Might as well insert a plug here for MailMate, an extremely powerful and customizable Mac email program that doesn't send your mail off to third-party servers, and does use Markdown as its primary formatting language. https://freron.com/. If you want something equally powerful and customizable (but no Markdown) on iPhone/iPad, try Preside. Literally the most customizable mail program I've ever used on any platform. https://preside.io/
