It's from the state next door, so maybe we get it fresher, but it's a nice mix of chili japoneses and salt that has fermented for awhile. It is a near purely stable capsicum flavor. Other hot sauces tend to throw in too much gunk or just aim to be obliteratingly hot, which is just silly.
