To be honest, there is no way a starship captain directs the ship using "degrees mark degrees"1. It would not be precise enough, for a start, and no way that it would make sense.
It would be like steering a car by constantly having to say "set course 243 degrees" and the like, rather than simply setting the sat nav.
It is one of the strangest features of #StarTrek I have tolerated.
